The joy of Winemaking
The joy of Winemaking

Our Winemaking philosophy is to enhance the expression of our site though minimal handling in the winery, natural or wild yeast fermentation, extended maceration and hand picking. Oak is given a supportive role. Hand harvest is seen as part of a series of harvests commencing with “green harvests” prior to full veraison in order to achieve a balance between fruit and vine.

2007 Methode Champenoise Chardonnay Pinot Noir

Light straw-yellow in colour, Whispering Hills Cuvee 2007 has a fragrant nose of toasty yeast & bread followed by a delicate, creamy, finely structured palate of honey, brioche and minerals with a long, crisp finish.  We are very close to finishing this vintage.

2008 Riesling
Light straw with a pale green hue, Whispering Hills Riesling displays very fine intense aromas of orange blossom, citrus and minerals.  The palate is equally intense and particularly long driven by fine citrus flavours and succulent, minerally mid palate richness.  Well balanced in acidity, this wine should cellar for up to 10 years.

2008 Chardonnay – Currently SOLD OUT, New Release Soon

2008 Cabernet Sauvignon
Brilliant deep red with crimson hue, Whispering Hills 2008 Cabernet Sauvignon displays a lifted bouquet of violets, blackberry and spice.  The palate comprises of beautifully integrated spicy oak, enveloped by rich loganberry, blackberry fruits and damson plum enhanced by fine grainy tannins.  The wine finishes long and even.

2008 Bendigo Shiraz – Quartz Block
Grown on ancient quartz and ironstone gravels Whispering Hills 2008 Shiraz displays a amalgam of mocha and spicy overtones on the bouquet followed by an opulent palate showing a rich array of liquorice, fruitcake and black pepper. The finish is long and supple complemented by ripe and grainy tannins. A wine to be savoured now or to be cellared for many years.
